- 🥔 2 medium potatoes (2 to 3 inches long)
- 🧂 2 teaspoons kosher salt
- 1/2 lb cooked, ground chorizo sausage
- 1/2 cup queso dip
- 🧀 1 cup shredded Monterey Jack cheese
- 🥚 2 large eggs
- 1 cup breadcrumbs
- 1 tablespoon oil
步驟
Place potatoes and kosher salt in a medium saucepan and add water to cover by one inch. Boil over high heat for 8-10 minutes until just tender. Drain and cool.
Slice potatoes in half across the center and scoop out the center flesh, leaving a 1/8-inch border. Combine cooked chorizo and queso dip in a bowl.
Fill one potato half with 1 teaspoon chorizo mixture, then place 1-2 teaspoons shredded cheese in the other half. Press together to hold using potato starch.
Dip filled potatoes in egg wash and coat lightly with breadcrumbs.
Preheat air fryer to 400°F (200°C). Spray potatoes lightly with oil and air-fry in batches until golden and crispy, about 8-10 minutes per batch.
