INGREDIENTS
Gelatin base
- 1 (3 ounce) package lemon flavored Jell-O® mix
- 1 (3 ounce) package orange flavored Jell-O® mix
- 2 cups boiling water
- 🍍 1 (20 ounce) can crushed pineapple, drained
- 1 (16 ounce) package miniature marshmallows
Custard
- 🍍 2 cups pineapple juice
- 1 cup white sugar
- 🥚 2 eggs, lightly beaten
- 5 tablespoons all-purpose flour
Fruit layer
- 🍌 3 bananas, sliced
- 🍋 1 tablespoon lemon juice
Whipped topping
- 2 (1.3 ounce) envelopes whipped topping mix
- 1 (8 ounce) package cream cheese, softened
Garnish
- 🥥 1 cup shredded coconut, toasted
STEPS
Combine lemon and orange gelatin powders with boiling water. Stir until dissolved, then add drained pineapple and marshmallows. Refrigerate until firm.
Whisk pineapple juice, sugar, eggs, and flour together in a saucepan over medium heat. Cook while stirring until thickened. Cool before adding to gelatin mixture.
Toss sliced bananas with lemon juice and layer over the custard mixture.
Prepare whipped topping, beat in cream cheese until smooth, and spread over bananas. Sprinkle with toasted coconut.
Chill for 2 to 4 hours before serving.
