INGREDIENTS
Meat
- 🍗 4 skinless, boneless chicken breast halves
Seasoning
- 🧂 Salt to taste
- Freshly ground black pepper to taste
Eggs
- 🥚 2 large eggs
Bread and Flours
- 1 cup panko bread crumbs
- 2 tablespoons all-purpose flour
Cheese
- 🧀 ¾ cup grated Parmesan cheese, divided
- ¼ cup fresh mozzarella, cut into small cubes
- ½ cup grated provolone cheese
Oil
- ½ cup olive oil for frying
- 2 teaspoons olive oil
Sauce & Garnish
- 🍅 ½ cup prepared tomato sauce
- ¼ cup chopped fresh basil
STEPS
Preheat an oven to 450°F (230°C).
Place chicken breasts between plastic sheets and pound to a thickness of 1/2 inch.
Season chicken with salt and pepper, then sprinkle evenly with flour.
Beat eggs in a shallow bowl. Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl. Dip flour-coated chicken in egg and then in bread crumb mixture. Let rest for 10-15 minutes.
Heat olive oil in a large skillet over medium-high heat. Fry chicken until golden, about 2 minutes per side.
Transfer chicken to a baking dish. Top each breast with 2 tablespoons tomato sauce, mozzarella cheese, basil, provolone cheese, remaining Parmesan, and a drizzle of olive oil.
Bake in the oven until cheese is browned and bubbly and chicken is fully cooked, 15-20 minutes.
