INGREDIENTS
Vegetable
- 🥒 2 zucchinis
- 🥕 4 carrots
- 🥦 2 cups broccoli
Cheese / Dairy
- đź§€ 12 ounces cheddar cheese, low-fat
Spices & Seasonings
- 1/2 teaspoon oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Oil & Fats
- 2 tablespoons vegetable oil

- 12 mini pitas
STEPS
Wash hands with soap and water.
Wash vegetables.
Remove broccoli flowers from stems, cut them into small florets, and put them in a mixing bowl.
Peel carrots and cut off their ends. Grate carrots, and put them into a mixing bowl.
Slice zucchini into thin slices, then cut each slice into quarters, and put them into a bowl.
Grate the cheddar cheese and set aside.
Measure oregano, pepper, garlic powder, and onion powder; mix together.
Heat vegetable oil in a skillet. Add spices to the heated oil, followed by the vegetable mixture. Sauté vegetables for about 5 minutes until slightly tender, then remove from heat.
Spoon vegetable mixture into each pita. Top the hot vegetables with 1 ounce of grated cheese.
Serve immediately and enjoy.
