- 🍅 2 medium tomatoes, diced

STEPS
Heat a pan over medium heat and add vegetable oil.
Pour in the beaten eggs and cook until just set. Remove and set aside.
Add the diced tomatoes to the pan and cook until softened.
Season the tomatoes with soy sauce, sugar, and salt. Stir well.
Return the cooked eggs to the pan, mix everything together, and cook for another minute.
Serve hot with steamed rice, if desired.
