INGREDIENTS
Protein and Meats
- 🥩 1 (1 ½-pound) skirt steak or flap steak
- 🥓 2 tablespoons bacon fat
Dry Spices and Seasonings
- 🧂 1 teaspoon salt
- 1/2 teaspoon ground dried chipotle pepper
- ⚫ 1 teaspoon freshly ground black pepper
- 1/2 teaspoon dried oregano
Vegetables
- 🧅 1 yellow onion, diced
- 🍅 2 ripe tomatoes, chopped
- 🥑 1 avocado - peeled, pitted and diced
- 🧅 ½ cup chopped white onion
Canned Goods
- 2 (15 ounce) cans pinto beans, rinsed and drained
Cheese and Dairy
- 🧀 12 ounces shredded Cheddar cheese
- 🧀 12 ounces shredded Monterey Jack cheese
- 🍶 ½ cup sour cream, for topping

- 1 tablespoon vegetable oil
- 💧 1 ½ cups water or chicken broth
- 🌮 1 (14 ounce) bag corn tortilla chips
- 🌿 ½ cup chopped fresh cilantro
STEPS
Season both sides of the steak with salt, black pepper, and chipotle pepper. Heat oil in a skillet over medium-high heat. Cook steak to medium doneness, about 6 minutes per side. Let the steak rest in a bowl.
Deglaze the skillet with a splash of water, stirring to scrape up browned bits. Pour the liquid over the steak and allow to cool completely.
Dice the steak into small pieces after cooling and toss with pan drippings in the bowl.
Melt bacon fat in a pot over medium heat. Add diced onion and a pinch of salt; cook for 5 to 6 minutes. Stir in oregano, pinto beans, and water. Simmer for 5 minutes, then mash beans to desired consistency.
Preheat the oven to 450°F (230°C).
In a heat-proof baking dish, layer tortilla chips 2 or 3 layers deep. Top with beans, steak pieces, and shredded cheeses.
Bake in the preheated oven until cheese melts, about 10 minutes.
Garnish the nachos with chopped tomatoes, diced avocado, chopped white onions, sour cream, and cilantro.
