INGREDIENTS
Vegetables
- 🥬 1/2 bunch spinach
Protein
- 🥚 3 eggs
Seasoning
- đź§‚ 3 pinches salt
Oil
- 2-3 tbsp cooking oil
Herbs
- đź§… 1 handful chopped green onion
STEPS
Wash the spinach thoroughly and cut into bite-sized pieces.
Beat 3 eggs with a pinch of salt until well mixed.
Heat a pan with a little oil and cook the egg mixture on low heat, stirring with chopsticks to create scrambled eggs.
Remove the scrambled eggs from the pan and set aside.
Add 2 tbsp of oil and a handful of chopped green onion to the pan. Cook on low heat to make scallion oil.
Increase the heat to high and add the spinach to the pan.
Once the spinach starts to wilt, add 2 pinches of salt and mix well.
Add the scrambled eggs back into the pan and mix everything together. Adjust seasoning with salt or oyster sauce if desired.
