INGREDIENTS

- 🍗 250g chicken thigh
- 🍚 210g cooked rice
- đź§€ Mozzarella cheese as needed
- đź§… 1/2 onion, sliced
- 🌱 1 stalk green onion
Seasonings
- đź§‚ 2.5 tbsp soy sauce
- 1 tbsp oligo syrup
- 1 tbsp mirin
- 0.5 tbsp sesame oil
- 🍅 0.5 tbsp ketchup
- 1 tbsp gochujang
- đź§„ 0.5 tbsp minced garlic
- A pinch of black pepper
STEPS
Cut the chicken thigh into bite-sized pieces, removing skin and excess fat.
Mix soy sauce, oligo syrup, mirin, sesame oil, ketchup, gochujang, minced garlic, and black pepper in a bowl. Marinate the chicken for 15 minutes.
Slice the onion and green onion. Reserve half of the green onion for garnish.
Heat oil in a wok and stir-fry the onion and green onion over high heat until the onion becomes translucent.
Add the marinated chicken to the wok and stir-fry until fully cooked.
Add the cooked rice to the wok and mix well with the chicken. Lower the heat to prevent sticking.
Turn the heat back to high and stir-fry until the rice is well mixed and slightly crispy.
Transfer the fried rice to a gratin dish and top with mozzarella cheese.
Microwave the dish for 2 minutes at 700W or until the cheese melts.
Garnish with the reserved green onion and serve.
