INGREDIENTS
- Liquid Ingredients - ⅔ cup vegetable oil
 
- Dairy / Egg - 🥚 4 eggs
 
- Main Flavor - 1 (15 ounce) can 100% pure pumpkin
 
- Sweeteners - 🍬 ⅔ cup white sugar
- ⅔ cup brown sugar
 
- Leavening Agents - 2 teaspoons baking powder
 
- Spices - 🧂 1 teaspoon salt
- 🌰 1 tablespoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon ground nutmeg
 
- Dry Ingredients - 3 cups all-purpose flour
- 🥣 1 ¾ cups old-fashioned rolled oats, divided
 
STEPS
Preheat the oven to 350°F (175°C). Lightly grease two 8x4-inch loaf pans.
Combine oil, eggs, and pumpkin in a large mixing bowl.
Stir in white and brown sugar, baking powder, salt, cinnamon, cloves, and nutmeg until well combined.
Gradually beat in the flour and 1 1/2 cups of oats until batter is fully mixed.
Pour batter into the prepared loaf pans and sprinkle tops with the remaining 1/4 cup of oats.
Press oats lightly into the top of the batter.
Bake in the preheated oven for 40–45 minutes, or until a knife inserted in the middle comes out clean.
Let cool for 15 minutes before slicing and serving.
