INGREDIENTS
Main Ingredients
- 1 pack silken tofu
- 🦐 10-12 shrimp
- 🥚 1 egg
- 🧅 1-2 handfuls chopped scallions
- 1 piece kombu (5cm x 5cm)
- 🧂 1-1.5 tbsp soy sauce
STEPS
Prepare kombu broth by adding water and kombu to a pot. Bring to a boil on high heat, then reduce to low heat and simmer for 15 minutes.
Scoop silken tofu into the pot in chunks using a spoon.
Add shrimp and 1-1.5 tbsp soy sauce to the pot.
Boil on high heat for about 5 minutes. Skim off any foam that rises to the surface.
Reduce to low heat and pour beaten egg in a circular motion into the pot. Stir gently once to prevent the egg from sticking to the bottom.
Top with chopped scallions and a sprinkle of pepper. Taste and adjust seasoning with salt if needed.
