INGREDIENTS

  • Pasta

    • 🍝 18 jumbo pasta shells
  • Meat

    • 🥩 1 ½ pounds ground beef
  • Vegetables

    • 🧅 2 tablespoons chopped onion
  • Tomato Products

    • 🍅 1 (12 ounce) can tomato paste
    • 🍅 1 (14 ounce) can tomato sauce
  • Seasoning

    • 🧂 ½ teaspoon salt
    • ½ teaspoon dried oregano
    • ½ teaspoon garlic powder
  • Dairy

    • 🥚 2 eggs
    • 3 cups cottage cheese
    • 🧀 1 (16 ounce) package shredded mozzarella cheese, divided
    • 🧀 ½ cup grated Parmesan cheese
  • Herbs

    • 2 tablespoons dried parsley
    • 🧂 1 teaspoon salt
    • ½ teaspoon ground black pepper

STEPS

1

Preheat the oven to 375 degrees F (190 degrees C).

2

Fill a large pot with lightly salted water and bring to a boil; stir in pasta shells and cook uncovered until nearly cooked through but firm, about 5 minutes. Drain and rinse with cold water.

3

Heat a large skillet over medium-high heat; cook and stir beef and onion in the hot skillet until browned and no longer pink. Drain excess grease. Stir in tomato paste, tomato sauce, salt, oregano, and garlic powder. Simmer sauce for 5 minutes. Spread 1/2 of the sauce into a 9x13-inch baking dish.

4

Beat eggs in a large bowl until smooth. Stir in cottage cheese, 3/4 of the mozzarella, Parmesan, parsley, salt, and black pepper until combined. Stuff cooked pasta shells with the cheese mixture and place them into the baking dish. Pour remaining sauce over shells and sprinkle with remaining mozzarella cheese.

5

Bake in the oven until shells are hot in the center and cheese is melted and bubbly, 25 to 30 minutes.
