INGREDIENTS
Dry Ingredients
- 3 cups cake flour
- 1 teaspoon baking soda
- 🧂 ¼ teaspoon salt
Wet Ingredients
- 🥚 6 large eggs, separated
- 2 cups white sugar, divided
- 🧈 1 cup butter, softened
- 🍋 2 teaspoons grated lemon zest
- 🍋 2 tablespoons lemon juice
- 🥛 1 cup plain whole milk yogurt
STEPS
Preheat the oven to 350°F (175°C). Grease a 10-inch tube pan.
Sift flour, baking soda, and salt together in a medium bowl. Set mixture aside.
In a large bowl, beat egg whites until soft peaks form. Gradually add 1/2 cup sugar, beating until stiff glossy peaks form. Set aside.
Beat butter and remaining 1 1/2 cups sugar in another large bowl with an electric mixer until fluffy, approximately 3 to 5 minutes.
Blend in egg yolks, lemon zest, and lemon juice. Add flour mixture alternately with yogurt, mixing until combined. Gently fold in beaten egg whites.
Pour the batter into the prepared pan and bake in the preheated oven for 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to finish cooling.
