INGREDIENTS
Vegetables
- 🍄 1 pack enoki mushrooms
- đź§… 1 onion, sliced
- đź§… A small amount of green onion
Protein
- 🥚 2 eggs
Seasoning
- A small amount of sesame oil
- A small amount of sesame seeds
- A small amount of black pepper
Cooking Oil
- A small amount of cooking oil
Sauce
- đź§‚ 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp broth or water
STEPS
Heat a pan with a small amount of cooking oil and sauté the sliced onion until softened.
Trim the base of the enoki mushrooms, rinse lightly, squeeze out excess water, and cut into 3-4 sections.
Add the enoki mushrooms to the pan and cook until they soften. Then, add soy sauce, mirin, and broth (or water) and simmer until the liquid reduces.
Serve warm rice in a bowl, top with a fried egg, and spoon the enoki mushroom mixture over the egg whites. Drizzle with a few drops of sesame oil and sprinkle with sesame seeds.
