INGREDIENTS
Vegetables and Herbs
- 🧄 1 head garlic
- 🌿 8 sprigs fresh basil
- 🌿 8 sprigs fresh oregano
- 1 teaspoon red pepper flakes
Pantry and Canned Goods
- 🍅 2 (28 ounce) cans tomatoes, undrained
- 2 tablespoons agave syrup
- 1 cup vegetable stock
Dairy
- 1/2 cup heavy cream or half-and-half
Oil and Seasonings
- 2 tablespoons olive oil
STEPS
Preheat the oven to 400°F (200°C). Spray a baking sheet with cooking spray. Place garlic bulb and onion on the prepared sheet.
Roast garlic and onion until very tender, approximately 40 to 45 minutes. Remove from the oven and let them cool until they are easy to handle.
Chop half of the roasted onion and release 4 garlic cloves. Set aside the remaining onion and garlic.
Heat olive oil in a Dutch oven over medium heat. Add chopped roasted onions and 4 roasted garlic cloves, cooking and stirring until fragrant (about 1 minute).
Add canned tomatoes (with juices), vegetable stock, and agave syrup. Bring to a simmer and cook until the mixture thickens, about 15 minutes.
Carefully transfer the tomato mixture with some liquid, the remaining onion, garlic, fresh basil, and oregano into a blender or food processor. Blend until smooth and free of chunks.
Return the blended mixture into the Dutch oven. Add heavy cream and adjust seasoning with salt and pepper. Simmer on low to medium heat for 5 to 10 minutes to meld flavors together.
