INGREDIENTS
Vegetables
- 2 cups green cabbage or kale
- 1/4 cup chopped green onions or leeks
- 1/4 cup chopped fresh parsley
Seasoning

- 1/4 teaspoon ground black pepper
Dairy
- 2 tablespoons butter
- 3/4 cup grated Parmesan cheese
Binder
- 🥚 4 large eggs, divided
- 🍞 1 cup Italian bread crumbs, divided
- 2 tablespoons water
Oil/Fat
- 2 1/2 cups vegetable oil for deep frying
STEPS
Gather all ingredients.
Place potatoes in a large saucepan, add water to cover, and bring to a boil. Cook until tender, about 15 minutes; then drain.
Cook cabbage in boiling water until tender, about 6 minutes; then drain.
Mash potatoes and mix with onions, parsley, salt, pepper, butter, and drained cabbage. Combine thoroughly.
Transfer mixture to a baking pan and refrigerate until cooled, about 1 hour.
Combine cooled mixture with Parmesan, breadcrumbs, and 2 eggs in a bowl.
Prepare egg wash and breadcrumbs for coating.
Form mixture into 16 balls and coat with egg wash and breadcrumbs.
Deep fry balls in batches, turning until golden and cooked, about 6 minutes per batch.
Drain on paper towels. Serve hot with dipping sauces.
