INGREDIENTS
Vegetables
- 🎃 1 butternut squash (peeled and seeded)
- 🧅 1 onion (finely chopped)
- 🧄 2 garlic cloves (finely chopped)
- 🥕 1 carrot (sliced)
Liquids
- 4 cups vegetable stock
- 🥥 1/2 cup coconut milk
Seasonings
- 🧂 1/2 teaspoon salt
- A pinch of black pepper
- 1 tablespoon olive oil
STEPS
Peel and seed the butternut squash, then cut it into bite-sized pieces.
Heat olive oil in a large pot and sauté the onion and garlic.
Add the butternut squash and carrots, and stir-fry for another 3 minutes.
Add the vegetable stock, cover, and simmer for 15 minutes.
Blend the soup until smooth and add the coconut milk.
Adjust seasoning with salt and pepper, reheat, and it's done.
