INGREDIENTS

  • Meat

    • 🥓 6 slices bacon
  • Vegetables

    • 🧅 1 cup red onion
    • 1 cup red bell pepper
    • 3 cups baby spinach
  • Dairy

    • 🥚 12 large eggs
    • 🥛 1/2 cup whole milk
    • 🧀 1 (8-ounce) package shredded Cheddar cheese
  • Seasonings

    • 2 teaspoons hot pepper sauce
    • 🧂 1/2 teaspoon salt
    • 🧂 1/2 teaspoon ground black pepper
  • Other

    • 1 (16.3-ounce) can refrigerated biscuits
    • 1 1/2 cups hash brown potatoes

STEPS

1

Preheat the oven to 350°F (175°C). Generously grease a 10-inch nonstick Bundt pan with the cooking spray.

2

Cook bacon in an extra-large skillet over medium heat until crisp, about 8 to 10 minutes. Drain on paper towels and crumble when cool.

3

Drain all but 1 tablespoon of bacon drippings. Add onion and bell pepper, cooking until tender for about 4 minutes. Add spinach and cook until wilted, 1 to 2 minutes. Set aside to cool.

4

Whisk together eggs, milk, hot sauce, salt, and pepper in a large bowl.

5

Add bacon, cooked vegetables, biscuit pieces, cheese, and hash browns to the bowl. Toss to combine and pour the mixture into the prepared pan.

6

Cover the pan with foil and bake for 30 minutes. Remove the foil and bake until a knife inserted in the center comes out clean, an additional 25 to 30 minutes.

7

Let the Bundt cake cool on a wire rack for 15 minutes. Run a thin spatula around the edges and middle to release. Invert the cake onto a platter and serve.
