INGREDIENTS
Vegetables
- 🥔 3-4 potatoes, peeled and chopped
- 20 small shishito peppers
Condiments
- đź§„ 1 tbsp minced garlic
- 1 tbsp gochujang (Korean chili paste)
- 1 tsp doenjang (Korean soybean paste)
- 1 tbsp chili powder
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 1 tbsp mirin (sweet cooking rice wine)
- 1 tsp sesame oil
- 1 tbsp corn syrup
STEPS
Peel and chop the potatoes into uniform pieces. Rinse under cold water and drain well.
Mix sugar, soy sauce, mirin, and sesame oil in a small bowl to create the sauce.
Heat a pan with a small amount of oil and add the potatoes. Cook until golden brown.
Add chili powder, doenjang, and gochujang to the pan and stir-fry on low heat.
Pour in 1 cup (180ml) of water and bring to a boil. Add shishito peppers, minced garlic, and corn syrup. Stir well.
Simmer until the sauce thickens and the potatoes are tender. Serve hot.
