INGREDIENTS
Vegetables
- 🥦 3 cups fresh broccoli florets
- 3 cups coarsely chopped cauliflower
Seasoning
- 1 teaspoon lemon-pepper seasoning
- 🧂 Salt to taste
- Ground black pepper to taste
Aromatics
- 🧄 2 cloves garlic, minced
Oil and Liquids
- 3 tablespoons olive oil
- 1 cup chicken broth
- 🍋 ¼ cup lemon juice
- 1 pint heavy cream
- 1 tablespoon capers
Pasta and Cheese
- 1 (12 ounce) package frozen gnocchi
- 🧀 ½ cup finely grated Parmigiano-Reggiano
STEPS
Heat olive oil in a large high-sided pan over medium heat. Add garlic and cook until fragrant, about 1 minute.
Add broccoli, cauliflower, and lemon-pepper seasoning. Mix well, cover, and cook for 4 minutes.
Remove the lid, mix well, and pour in chicken broth. Replace lid and steam-cook the vegetables for another 4 minutes.
Meanwhile, bring a large pot of lightly salted water to a boil. Cook gnocchi until they float to the top, about 3 to 5 minutes. Drain, reserving 1/2 cup of the cooking water.
Pour lemon juice over the steamed vegetables and mix. Add heavy cream and capers, then simmer for 6 minutes.
Mix in the cooked gnocchi and reserved pasta water. Season with salt and pepper. Top with grated Parmigiano-Reggiano and let the dish sit for 2 minutes before serving.
