INGREDIENTS
Raspberry Mixture
- 🍓 2/3 cup fresh or frozen raspberries
- 2 tablespoons cashew butter
- 💧 2 tablespoons water
Brownie Batter
- 🍫 4 ounces dark chocolate, chopped
- 🧈 4 tablespoons unsalted butter
- 1/4 cup canola oil
- 🥚 1 large egg
- 🥚 1 large egg yolk
- 🍬 1/2 cup sugar
- 1 teaspoon vanilla extract
- 🧂 1/4 teaspoon salt
- 1/3 cup all purpose flour
- 1/3 cup whole-wheat pastry flour
- 2 tablespoons unsweetened cocoa powder
STEPS
Lightly coat 20 foil muffin cups with cooking spray.
Cook raspberries over medium-low heat until broken down. Purée with cashew butter and water in a food processor.
Melt chocolate, butter, and oil in a bowl over simmering water. Stir until combined and let cool for 20 minutes.
Beat egg, yolk, sugar, vanilla, and salt with a mixer until thickened.
Fold flours and cocoa powder into the egg mixture. Mix in melted chocolate mixture until well combined.
Layer muffin cups: 2 tsp batter, 1 tsp raspberry mixture, then 1/2 tsp batter.
Preheat air fryer to 350°F (175°C).
Cook brownies in the air fryer for 5 minutes until set.
Cool brownies on a wire rack. Store chilled and covered for up to 3 days.
