Cook chorizo in a large skillet over medium-high heat until it turns dark red, 6 to 8 minutes, stirring frequently. Transfer chorizo to a bowl; set aside.
Melt bacon grease in the same skillet over medium to medium-high heat. Add potatoes; cook and stir for 10 minutes.
Add onion and stir until potatoes are fork-tender, and onion is translucent, about 2 to 6 minutes.
Return chorizo to the skillet; stir until heated through. Season with salt and black pepper.
