- 🥔 2 pounds potatoes, peeled and halved
- 🧅 1 bunch green onions, thinly sliced

- 🧈 ¼ cup butter, cut into pieces

Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce the heat to medium-low and simmer until tender.
Drain potatoes well, then return to the pot and cover with a clean dish towel. Place the pot over very low heat until potatoes are dry.
Meanwhile, heat the milk and green onion in a saucepan over medium-low heat until warm.
Once potatoes are dry, add butter and salt; mash with a potato masher until smooth. Stir in warm milk mixture until well combined, then season with pepper.
