INGREDIENTS
Cookie Base
- 🧈 1 cup butter, softened
- 🍚 1 cup sugar
- 🌾 2 ½ cups Pillsbury BEST® All Purpose Flour
- 🧂 ½ teaspoon baking soda
- 🧂 ¼ teaspoon salt
Topping
- 🍋 2 (10 ounce) jars Dickinson's® Lemon Curd
- 🥥 ¾ cup flaked coconut
- 🌰 ½ cup almonds, chopped
- 🍚 1 tablespoon powdered sugar
STEPS
Preheat your oven to 350 degrees F. In a large bowl, beat butter and sugar until creamy. Add flour, baking soda, and salt. Mix until the mixture forms coarse crumbs.
Pat 3/4 of this mixture evenly into the bottom of an ungreased 13 x 9-inch baking pan.
Bake the base layer in the preheated oven for 10 minutes. Remove from oven and let it cool slightly.
Spread the lemon curd evenly over the partially baked and slightly cooled base layer.
To the remaining crumb mixture, add flaked coconut and chopped almonds. Stir well to mix.
Sprinkle the crumb topping evenly over the lemon curd layer.
Return the dish to the oven and bake for an additional 25 minutes or until the top is lightly browned.
Remove from the oven and allow to cool slightly. Dust the bars with powdered sugar.
Cut into squares and serve. Enjoy!
