INGREDIENTS
Dry Ingredients
- 🌾 2 1/4 cups flour, plus more for rolling
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 🧂 1 teaspoon sea salt
Wet Ingredients
- 🧈 8 tablespoons butter
- 🥛 3/4 cup yogurt
- 💧 1/2 cup water
Topping
- 🧈 2 tablespoons butter
- 🧂 1/2 teaspoon sea salt
STEPS
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper. Whisk together flour, baking powder, baking soda, and sea salt in a large bowl.
Coat whole stick of butter in flour mixture. Grate butter on a box grater into bowl. Toss butter in the flour mixture until it resembles coarse crumbs.
Whisk together yogurt and water in a small bowl; add to flour mixture. Gently fold to bring dough together. Add more water if needed for it to fully moisten.
Turn dough out onto a lightly floured surface. Lightly knead 3 to 4 times until it comes together. Sprinkle with flour; pat to 3/4-inch thickness. Repeat layering by cutting into four portions, stacking, pressing, and patting three times.
Press a 2 1/2- to 3-inch biscuit cutter into the dough to shape biscuits. Arrange on the baking sheet barely touching.
Bake in the preheated oven for 15–16 minutes until tops are crisp and golden. Let cool for 5 minutes. Brush tops with melted butter and sprinkle with flaky salt.
