INGREDIENTS
Base
- 🧈 1 teaspoon melted butter, or as needed
- 2 tablespoons white sugar
Chocolate Mixture
- 🍫 2 ounces 70% dark chocolate, broken into pieces
- 🧈 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 🥛 4 ½ tablespoons cold milk
- 🧂 1 pinch salt
- 1 pinch cayenne pepper
- 🥚 1 large egg yolk
Egg White Mixture
- 🥚 2 large egg whites
- 1 pinch cream of tartar
- 1 tablespoon white sugar, divided
STEPS
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment.
Brush two ramekins with melted butter and coat with sugar. Remove excess sugar.
Melt chocolate over hot (not simmering) water in a mixing bowl.
In a skillet, combine butter and flour. Whisk in milk until thick. Mix with melted chocolate. Add salt, cayenne, and egg yolk.
Whisk egg whites and cream of tartar until thick, adding sugar incrementally. Whisk until soft peaks form.
Fold part of the egg whites into the chocolate mixture. Then gently fold in the rest.
Divide mixture into ramekins. Place ramekins on a baking sheet.
Bake for 12-15 minutes until soufflés have risen above rims.
Serve immediately, optionally dust with cocoa powder.
