Preheat oven to 400°F (200°C) and cook bacon in a skillet until crisp. Reserve drippings.

Slice scallions and sauté light green parts, cabbage, garlic, and ginger in skillet until softened.
Combine rice, cooked vegetables, bacon, mayonnaise, and soy sauce in a bowl.
Heat oil and bacon drippings in a skillet, add rice mixture, flatten, and poke holes for steam.
Cook rice in the skillet until edges brown, then bake in the oven for 30–35 minutes until crispy.
Prepare Okonomiyaki sauce by whisking ketchup, Worcestershire sauce, and soy sauce together.
Drizzle sauces over baked rice, garnish with scallions, bacon, sesame seeds, and optional aonori or bonito flakes.
