Main Ingredients
- 1 pound lean ground pork
- 🍉 2 cups diced (1/2-inch) watermelon
Vegetables & Aromatics
- 🧄 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger root
- 2 stalks celery, finely chopped
- 🧅 ½ cup chopped green onion
Condiments & Flavorings
- 1 teaspoon soy sauce
- ½ cup hoisin sauce
Other
- 🌰 ¾ cup pine nuts
- 1 tablespoon vegetable oil

Heat oil in a large, non-stick skillet over high heat. Add onion, garlic, and ginger, stirring until fragrant, about 1 minute. Add pork and continue to cook until brown, 7 to 10 minutes. Drain excess liquid from the skillet.
Reduce the heat to medium. Add celery and carrot; stir until soft, 2 to 3 minutes. Stir in green onions and soy sauce; remove from heat; stir in pine nuts and hoisin sauce. Fold in watermelon.
Spoon pork mixture into lettuce leaves; wrap to cover filling and serve.
