- 🐓 2 large skinless, boneless chicken breast halves
- 🧂 ½ teaspoon kosher salt
- 1 pinch ground black pepper
- ½ cup flour
- 🥚 1 egg, beaten
- ¾ cup dry bread crumbs
- ½ cup light olive oil for frying, or as needed
- ½ cup ricotta cheese
- ½ cup shredded sharp white Cheddar cheese
- Salt and freshly ground black pepper to taste
- ½ teaspoon olive oil
- 2 tablespoons grated Parmigiano-Reggiano cheese for topping
- 1 cup marinara sauce, heated, or more as needed
- 1 tablespoon chopped fresh flat-leaf parsley

Preheat oven to 500°F (260°C) and line a rimmed baking sheet with foil.
Pound chicken breasts evenly, season with salt and pepper, then coat with flour.
Brush off excess flour, coat chicken in beaten egg, and cover with bread crumbs.
Fry chicken in olive oil over medium-high heat until golden on both sides, about 2-3 minutes per side. Transfer to baking sheet.
Mix ricotta, Cheddar cheese, olive oil, salt, and black pepper. Spread mixture on chicken. Top with Parmigiano-Reggiano.
Bake chicken for 10-12 minutes or until fully cooked and cheese is melted.
Plate with heated marinara sauce and garnish with parsley before serving.
