- 🥔 6 large red potatoes
- 3 cups canola oil
- 2 ½ tablespoons truffle oil
Seasoning
- ⅔ cup dried cilantro
- 🧀 ¼ cup grated Parmesan cheese
- 🧄 3 cloves garlic, minced
- 🧂 2 tablespoons sea salt
- Freshly ground black pepper to taste
STEPS
Cut the red potatoes to desired size, ensuring fries are as close in size as possible.
Microwave the potatoes in a microwave-safe container for 4 minutes.
Heat canola oil in a frying pan to 375°F (190°C).
Fry the potatoes in batches for 4 to 5 minutes until browned and soft, tossing frequently.
Preheat the oven to 225°F (110°C).
Drain the fries using a bowl lined with paper towels to remove excess oil.
Mix cilantro, Parmesan cheese, garlic, sea salt, and black pepper in a bowl. Toss the fries in the mixture.
