INGREDIENTS

- 🧅 1/3 cup red onion
- 1/4 cup red bell pepper
- 1/4 cup chopped celery
- 3 tablespoons chopped parsley

- 1/4 cup mayonnaise
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Old Bay
- 🍋 2 teaspoons lemon juice
- 🧂 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper

- 🧈 1 tablespoon butter
- 🥚 1 large egg, beaten
- 1 2/3 cups panko breadcrumbs, divided
- 🐟 2 cups salmon
- 3 tablespoons vegetable oil
STEPS
Preheat the oven to 375°F (190°C). Set a wire rack inside a baking sheet and spray with cooking spray.
Heat butter in a skillet over medium-high heat. Add onion, bell pepper, and celery, and cook until softened, about 4 minutes. Transfer to a bowl and let cool slightly.
Mix parsley, Dijon mustard, mayonnaise, Worcestershire sauce, Old Bay, egg, lemon juice, salt, and pepper in the bowl. Stir in 2/3 cup panko breadcrumbs until moistened, then fold in salmon.
Form the salmon mixture into six balls. Roll each in remaining breadcrumbs and flatten into patties.
Heat vegetable oil in a skillet over medium-high heat. Fry patties (in batches if necessary) until browned, about 3 minutes per side. Transfer to prepared baking sheet.
Bake in the oven until cooked through, 10–15 minutes or until internal temperature reaches 145°F (63°C).
