INGREDIENTS
Protein
- 4 slices Canadian bacon
- 🥚 4 large eggs
- 🥚 3 egg yolks
Dairy
- 🧈 1 cup butter
- 🥛 1 tablespoon heavy cream
Seasonings
- 1 teaspoon white vinegar
- 1 dash ground cayenne pepper
- 🧂 ½ teaspoon salt or to taste
- 1 tablespoon lemon juice
Carbohydrates
- 4 English muffins, split and toasted
STEPS
Fry Canadian bacon in a skillet over medium-high heat until evenly browned.
Fill a large saucepan with about 3 inches of water; bring to a simmer and add vinegar. Crack eggs into the water and poach for 2 to 3 minutes. Remove with a slotted spoon.
Melt butter until bubbly in a small pan or microwave; remove from heat before browning.
Blend egg yolks, heavy cream, cayenne pepper, and salt in a blender. Add half of the melted butter slowly, then blend in lemon juice and the rest of the butter.
Place split English muffins on plates. Top each with one slice of Canadian bacon, one poached egg, and drizzle with sauce. Serve immediately.
