INGREDIENTS
Sauce
- 🍍 1 (20 ounce) can crushed pineapple
- 1 cup chicken stock
- ¾ cup brown sugar
- 🧂 ¾ cup reduced-sodium soy sauce
- ¼ cup apple cider vinegar
- 2 tablespoons ground ginger
- 2 tablespoons garlic powder
- 1 teaspoon ground black pepper
Chicken
- 🍗 3 pounds boneless, skinless chicken thighs
Thickening Agent
- 2 tablespoons cornstarch (optional)
- 💧 2 tablespoons cold water (optional)
STEPS
Combine pineapple, chicken stock, brown sugar, soy sauce, apple cider vinegar, ground ginger, garlic powder, and black pepper in a mixing bowl. Stir until the brown sugar is dissolved.
Place chicken thighs in the pressure cooker. Pour the pineapple mixture over the chicken and gently stir to coat.
Seal the pressure cooker and bring it to high pressure over high heat. Reduce the heat to low and maintain high pressure. Cook for 20 minutes.
Release pressure using the quick-release method. Unlock and remove the pressure cooker lid. Transfer the chicken to a serving dish and keep warm.
In a separate bowl, whisk cornstarch into cold water. Stir this mixture into the sauce in the cooker. Bring to a boil and cook until the sauce thickens, about 3 minutes. Serve the chicken topped with the sauce.
