INGREDIENTS
Potatoes
- 🥔 1 (30 ounce) package frozen hash brown potatoes
 
Cheese
- 🧀 2 cups shredded Cheddar cheese
 
Dairy
- 1 (16 ounce) container sour cream
 
Soup
- 1 (10.5 ounce) can condensed cream of mushroom soup
 
Fat
- 🧈 1 cup butter, divided
 
Vegetables
- 🧅 1 onion, chopped
 
Topping
- 3 cups crushed cornflakes
 
STEPS
Preheat the oven to 425°F (220°C) and lightly grease a 9x13-inch baking dish.
Spread hash browns into the prepared dish and set aside.
In a large bowl, mix shredded Cheddar cheese, sour cream, and condensed cream of mushroom soup. Set aside.
Melt 1/2 cup butter in a large skillet over medium heat and sauté the chopped onion for 5 minutes.
Add the sautéed onion to the cheese mixture and mix until combined. Spread the mixture over the hash browns in the dish.
Sprinkle crushed cornflakes evenly over the top.
Melt the remaining 1/2 cup butter and pour it over the cornflake topping.
Bake in the preheated oven for 1 hour, until golden and bubbly.
Let cool slightly and serve warm.
