INGREDIENTS
Chicken
- π 1 1/4 pounds boneless skinless chicken thighs
Seasoning
- 2 teaspoons seasoning
- 1/2 teaspoon paprika

- π§ 1/4 teaspoon ground black pepper
- 1 teaspoon Dijon mustard
- 1/4 teaspoon dried oregano
- π§ 1 tablespoon soy sauce
Vegetables
- π 1 cup cherry tomatoes
- π₯ 1 cup English cucumber
- π§ 1/2 cup red onion
- 1/2 cup banana pepper rings
Herbs
- 1/2 cup chopped parsley
Oils and Dressings
- 4 tablespoons olive oil
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon banana pepper brine
- π― 2 teaspoons honey
Rice

STEPS
Preheat the oven to 400Β°F (200Β°C). Lightly grease a baking sheet or line with parchment.
Combine chicken, 1 tablespoon olive oil, Greek seasoning, paprika, garlic, and salt in a bowl. Stir until well coated; set aside.
Whisk olive oil, red wine vinegar, banana pepper brine, honey, Dijon mustard, oregano, salt, and black pepper in a small bowl to create the dressing. Set aside.
Combine cooked rice with soy sauce, 3 tablespoons olive oil, and Greek seasoning. Spread onto the baking sheet.
Bake rice in the oven until crispy and lightly browned, about 40 minutes.
Heat oil in a skillet over medium-high heat. Cook chicken until browned and no longer pink in the center, about 8 minutes total. Deglaze with water and remove from heat.
To serve, divide chicken, vegetables, crispy rice, and feta cheese among 4 bowls. Drizzle with dressing.
