INGREDIENTS
Dry Ingredients
- 🌾 3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 🧂 ½ teaspoon salt
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
Wet Ingredients
- 🍯 1 ½ cups honey
- 🥛 ¾ cup buttermilk
- 🥚 3 eggs
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
Miscellaneous Ingredients
- 🥕 2 cups finely grated carrot
- 🍍 1 (8 ounce) can crushed pineapple, drained
- 🌰 1 cup chopped walnuts
Frosting
- 🧀 2 (8 ounce) packages cream cheese, softened
- 🍯 ⅓ cup honey
- 1 teaspoon vanilla extract
STEPS
Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
In a medium bowl, mix the dry ingredients: flour, baking soda, salt, cinnamon, nutmeg, and ginger.
In a large bowl, mix the wet ingredients: honey, buttermilk, eggs, oil, and vanilla extract until well blended.
Combine the dry ingredients with the wet mixture and stir until fully incorporated. Add carrot, pineapple, and walnuts by hand.
Pour the batter into the prepared pan and bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
Cool the cake completely before adding frosting.
To prepare the frosting, mix cream cheese, honey, and vanilla extract in a bowl until well blended. Spread over the cooled cake.
