INGREDIENTS
Base Layer
- ⅔ cup packed brown sugar
- 🧈 4 ½ tablespoons unsalted butter, cut into small pieces
- 🍌 3 medium bananas, sliced 1/4-inch thick
Cake Batter
- 1 ¾ cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- 🧂 1 pinch salt
- ¾ cup white sugar
- 🧈 ⅓ cup unsalted butter, softened
- 🥚 2 large eggs
- 1 ½ teaspoons vanilla extract
- 🍌 2 medium overripe bananas, mashed
- ⅓ cup sour cream
STEPS
Preheat the oven to 350°F (175°C) and grease an 8-inch square cake pan.
Spread brown sugar on the bottom of the prepared pan and scatter butter pieces on top. Place the pan in the oven until butter has melted (5-7 minutes). Remove from oven and stir mixture evenly.
Arrange sliced bananas on the bottom of the pan and set aside.
Mix flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
Beat white sugar and softened butter with an electric mixer in a large bowl. Add eggs and vanilla, then add mashed bananas and sour cream. Beat until well mixed.
On low speed, combine the flour mixture into the wet ingredients until the batter is just mixed.
Pour the batter over the banana slices in the pan and smooth the top.
Bake in the oven for 30-35 minutes or until a toothpick inserted into the center comes clean.
Let the cake cool in the pan for 30 minutes before inverting the pan and slicing.
