INGREDIENTS
Vegetables
- 🍆 2-3 eggplants
- 🧅 1/4 cup chopped onion
- 🍅 1/4 cup chopped tomato
- 1/4 cup chopped bell pepper
Condiments
- 2 tbsp soy sauce
- 🍋 2 tbsp lemon juice
- 🍯 1 tbsp honey
- 🧄 1 tsp minced garlic
- 1 small piece of ginger
- 1 tsp sesame oil
STEPS
Cut the eggplants lengthwise into quarters, leaving the stem intact.
Sprinkle salt on the eggplants and heat a pan with olive oil. Place the eggplants in the pan, cover with a lid, and cook on low heat for 5 minutes.
While the eggplants are cooking, finely chop the onion, tomato, and bell pepper.
Flip the eggplants, cover again, and cook for another 2-3 minutes.
Place the cooked eggplants on a serving plate, top with the chopped vegetables, and drizzle the dressing made from soy sauce, lemon juice, honey, garlic, ginger, and sesame oil.
