INGREDIENTS
Crust
- 1 1/2 cups all-purpose flour
- 🧈 3/4 cup butter
- 🧂 1 tablespoon white sugar
Filling
- 1/4 cup all-purpose flour
- 8 cups diced rhubarb
- 🧂 2 cups white sugar
- 🥛 1 cup evaporated milk
- 🥚 6 large egg yolks
Meringue
- 🥚 6 large egg whites
- 🧂 3/4 cup white sugar
- 1 teaspoon vanilla extract
STEPS
Preheat the oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
Combine 1 1/2 cups flour, butter, and 1 tablespoon sugar in a large bowl; beat with an electric mixer until combined. Press the mixture into the bottom of the prepared baking dish to form the crust.
Bake the crust in the preheated oven until firm, about 15 minutes. Let it cool.
Combine 1/4 cup flour, rhubarb, 2 cups sugar, evaporated milk, and egg yolks in a bowl. Mix well and pour over the cooled crust.
Bake in the oven until the filling is set, about 1 hour.
Beat egg whites in a large bowl with an electric mixer until foamy. Slowly beat in 3/4 cup sugar and vanilla extract until stiff peaks form.
Spread the meringue over the rhubarb filling. Bake until the meringue is golden brown, 15 to 20 minutes.
