INGREDIENTS
Protein & Dairy
- 🥓 1 pound bacon
- 1 pound bulk pork sausage
- 🥚 6 large eggs
- 1 cup shredded pepper Jack cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
Vegetables
- 🧅 1 large sweet onion, chopped
- ¼ cup chopped garlic
- 2 (4.5 ounce) cans diced green chile peppers, divided
- 3 pounds frozen hash brown potatoes, thawed
Spices & Seasonings
- 2 dashes liquid smoke flavoring
- ½ teaspoon hot pepper sauce (such as Cholula)
- 🧂 ½ teaspoon seasoned salt (such as Lawry's)
- ⅛ teaspoon white pepper
- 1 tablespoon dried parsley
- 1 teaspoon dried basil
- 🧂 Salt and black pepper to taste

- ¼ cup bacon drippings
- 1 (4 ounce) can chopped black olives
STEPS
Cook bacon in a skillet over medium-high heat until evenly browned, about 10 minutes. Drain on a paper towel-lined plate. Cook the sausage in bacon grease until crumbly and browned, about 10 minutes. Retain 1/4 cup of bacon drippings.
Reduce skillet heat to medium and sauté onion, garlic, and one can of green chiles in the reserved bacon drippings until onion is translucent, about 10 minutes.
Meanwhile, in a mixing bowl, beat eggs with liquid smoke, hot pepper sauce, seasoned salt, white pepper, parsley, and basil. Stir in crumbled bacon, sausage, remaining green chiles, hash browns, and cooked onion mixture. Season to taste with salt and pepper.
Spray a 9x13-inch baking dish with cooking spray. Transfer the mixture into the prepared dish, smooth the top, cover with foil, and refrigerate overnight.
Preheat the oven to 400°F (200°C). Bake the casserole, covered, for 1 hour.
Uncover the casserole, sprinkle with pepper Jack, Monterey Jack, and Cheddar cheeses. Arrange Cheddar cheese in the shape of a cross and outline with black olives. Bake for an additional 20-30 minutes until cheese is hot and bubbly.
