INGREDIENTS
Vegetables
- 🥔 5 potatoes, peeled and cubed
- 🥕 5 carrots, chopped
- 4 stalks celery, chopped
- 🧅 1 sweet onion, chopped
- 🧄 3 cloves garlic, chopped
Pantry Staples
- 2 tablespoons olive oil
- 🍅 1 (6 ounce) can tomato paste
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (14 ounce) can vegetable broth
- 1 ½ quarts water
- 3 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh oregano
- 🧂 1 tablespoon salt
Grains
- 2 cups uncooked elbow macaroni
STEPS
Heat olive oil in a large pot over medium heat. Stir in potatoes, carrots, celery, onion, and garlic.
Mix in tomato paste, kidney beans, vegetable broth, and water. Season with basil, oregano, and salt. Cook and stir for 30 minutes, or until vegetables are tender.
Mix macaroni into the pot and continue cooking for 10 minutes, or until macaroni is tender.
