- 🥔 2 medium potatoes, peeled and grated
- 🥕 1 carrot, grated
- 🥬 1 cup shredded lettuce

ÉTAPES
Heat olive oil in a large non-stick skillet over medium heat.
Add grated potatoes and carrot to the skillet, cooking for 5-7 minutes until slightly softened.
Spread the shredded lettuce evenly over the vegetables.
Pour whisked eggs over the vegetables, season with salt and pepper, and let cook for 5-7 minutes until the edges are set.
Transfer the skillet to an oven on broil mode for 2-3 minutes to set the top, or flip carefully in the skillet to cook the other side.
Slice and serve warm.
