INGREDIENTS
Cookie Dough
- 🧂 1 ¼ cups white sugar
- 🧈 ¾ cup salted butter, softened
- ¼ cup vegetable oil
- 🥚 3 egg yolks
- 🍋 3 tablespoons lemon zest
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon cream of tartar
Cinnamon-Sugar Coating
- 🧂 2 tablespoons white sugar
- 🌰 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
STEPS
Preheat the oven to 350°F (175°C). Lightly grease 2 cookie sheets and set aside.
Beat 1 1/4 cups sugar, butter, and oil together until creamy. Beat in the egg yolks, lemon zest, and vanilla extract.
Combine flour, baking soda, and cream of tartar in a separate bowl. Sift until mixed. Gradually add it to the butter mixture in 2 batches, stirring until just combined.
Mix sugar, cinnamon, and nutmeg together. Shape dough into walnut-sized balls and roll them in the cinnamon-sugar mixture. Place them 2 inches apart on the prepared baking sheets.
Bake for 10-12 minutes until edges are golden. Cool for 2-3 minutes on the baking sheets before transferring to a wire cooling rack.
