INGREDIENTS
Base Ingredients
- 1 teaspoon olive oil
- 🧅 ½ medium onion, thinly sliced
- 1 small green bell pepper, thinly sliced
- 4 ounces mycoprotein pieces, e.g., Quorn™
- 🧄 1 clove garlic, chopped
- 1 teaspoon paprika
- 🍅 1 (14.5 ounce) can whole peeled tomatoes, chopped, juice reserved
- ½ cup red wine
- 1 teaspoon dried oregano
- 🍅 1 teaspoon tomato puree
- 1 teaspoon sugar
- 🧂 salt and pepper to taste
STEPS
Heat olive oil in a large skillet over medium heat, and sauté the onion until tender, about 5 minutes. Mix in green pepper and mycoprotein pieces, and sauté until the pepper is tender, for another 5 minutes. Mix in garlic and paprika.
Stir tomatoes with their juice into the skillet. Mix in wine, oregano, and tomato purée. Bring the mixture to a boil. Reduce heat to low, and simmer until thickened, about 25 minutes.
Just before serving, stir in sugar and season with salt and pepper.
