INGREDIENTS
Pasta Dough
- 🌾 2 cups all-purpose flour
- 💧 ¼ cup water, or more to taste
- 🥚 2 large eggs
- 1 splash olive oil
- 🧂 2 pinches salt
Pesto
- 🧄 2 cloves garlic, roughly chopped
- 🌲 2 ½ tablespoons pine nuts
- 🌿 2 ½ cups lightly packed fresh basil
- ½ cup extra-virgin olive oil
- 🧀 ½ cup grated Parmesan cheese
- 🧂 1 pinch salt
STEPS
Combine flour, water, eggs, olive oil, and salt for pasta in a food processor; pulse until a dough forms. Add water if needed.
Dump dough onto a floured surface. Knead until smooth and chill for at least 30 minutes.
Shape chilled dough into trofie pasta by rolling and shaping it into spirals on a wooden board.
Process garlic and pine nuts until sandy. Add basil and olive oil, blend until smooth, and mix in grated Parmesan. Add salt to taste.
Boil trofie pasta in lightly salted water for about 12 minutes, until tender.
Drain pasta, toss with pesto, and serve immediately.
