INGREDIENTS
Bread and Butter
- 🍞 12 (½-inch thick) slices sourdough bread
- 🧈 1/4 cup butter, softened, divided
Cheese
- 🧀 3 ounces cream cheese, softened
- 🧀 12 slices pre-sliced Cheddar cheese
- 🧀 1 cup shredded Italian blend or Cheddar cheese
Tomato Base
- 🍅 2 (10.5 ounce) cans condensed tomato soup
- 🍅 1 cup tomato juice
Egg and Seasonings
- 🥚 2 large eggs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
STEPS
Preheat the oven to 450°F (230°C) and grease a 9x13-inch baking dish.
Spread 6 slices of bread with butter and place them butter side down on an extra large baking sheet.
Spread cream cheese on the bread slices and top with Cheddar cheese. Add remaining bread slices on top, butter side up.
Bake the sandwiches for 12 to 14 minutes at 450°F (230°C), flipping once until cheese melts. Cool for at least 15 minutes. Reduce oven temperature to 350°F (175°C).
Prepare soup mixture by whisking together tomato soup, tomato juice, eggs, Italian seasoning, and garlic powder.
Cut toasted sandwiches into 1-inch cubes.
Pour soup mixture into the prepared dish and evenly place sandwich cubes into the mixture, pressing cubes slightly to submerge.
Sprinkle shredded Italian blend cheese on top and bake at 350°F (175°C) for 25-30 minutes until heated, golden, and melted.
