INGREDIENTS
Crust
- 1 1/4 cups all-purpose flour
- 1 cup whole wheat flour
- 1 cup almond meal
- 1 tablespoon white sugar
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 🧈 3/4 cup butter
- 🥛 3 tablespoons buttermilk
Custard
- 🥚 10 egg yolks
- 2/3 cup white sugar
- 2/3 cup cornstarch
- 🥛 1 quart milk
- 3 sprigs basil
- 1/2 teaspoon vanilla extract
Topping
- 🍑 15 fresh apricots, pitted and sliced
- 1 cup apricot jam
STEPS
Preheat oven to 350°F (175°C).
Mix all-purpose flour, whole wheat flour, almond meal, sugar, lemon zest, and salt. Cut in butter until pea-sized crumbles form. Stir in buttermilk until dough comes together.
Press dough evenly across the bottom and 1/2-inch up the sides of a 12x16-inch tart pan.
Bake crust for 20 minutes until lightly browned. Let cool completely for 1 hour.
Whisk egg yolks, sugar, and cornstarch together in a pot. Whisk in milk and add basil sprigs. Cook over medium heat until steaming, about 8 minutes. Remove basil sprigs and whisk until thickened.
Strain custard through a mesh into a bowl, add vanilla extract, and cover with plastic wrap. Refrigerate until cold for 3 hours.
Spread cold custard over crust evenly.
Layer sliced apricots on top of the custard.
Melt apricot jam in a microwave for 1 minute and brush over apricots.
