INGREDIENTS
Dry Ingredients
- 🍞 1 cup all-purpose flour
- 🍞 1 tablespoon all-purpose flour
- 1 teaspoon baking soda
- ¾ teaspoon baking powder
- 🧂 ½ teaspoon salt
Wet Ingredients
- 🧈 1 ¾ sticks cold salted butter
- 🍬 ½ cup brown sugar
- 🍬 ½ cup white sugar
- 🥚 1 large egg
- 1 teaspoon vanilla extract
Spices
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Mix-ins
- 2 cups rolled oats
- 1 cup raisins
STEPS
Preheat the oven to 350°F (175°C). Line 2 baking sheets with parchment paper.
Combine flour, baking soda, baking powder, and salt in a large bowl. Set aside.
Place cold butter in a microwave-safe bowl and heat until soft but not melted (20-30 seconds). Add brown sugar and white sugar; mix with a whisk or spoon until combined.
Add egg, vanilla extract, cinnamon, and nutmeg to the sugar mixture; mix well. Then incorporate the dry ingredients into the mixture.
Fold in oats and raisins until evenly distributed in the batter.
Roll dough into small balls (1 1/2 inches). Arrange on the baking sheets, spacing them 3 inches apart.
Bake the cookies for 13-15 minutes until golden brown and crispy. Let cool before serving.
