INGREDIENTS
Vegetables
- 🍠 1 large sweet potato, peeled and grated
Eggs
- 🥚 2 large eggs
Spices
- ¼ teaspoon black pepper
- 🧂 ½ teaspoon salt
Oils
- 2 teaspoons olive oil, or more if needed
Condiments
- 1 cup applesauce
- 🥛 1 cup plain nonfat yogurt
STEPS
Preheat the oven to 200°F (95°C). Line a baking sheet with paper towels.
Fill a bowl with lightly-salted water. Rinse grated sweet potato in the water, drain in a sieve, and pat dry with paper towels. Place into a bowl.
Squeeze excess moisture from grated onion, and mix it with sweet potato. Stir in eggs and pepper until well combined.
Heat olive oil in a nonstick skillet over medium heat. Spoon 1 heaping tablespoon of potato mixture per patty into hot oil, flatten with a fork, and fry until golden brown and crisp (5–8 minutes on each side).
Flip, cook the other side, sprinkle with salt, and set cooked patties on the lined baking sheet in the preheated oven while finishing the rest. Stir mixture before cooking each batch.
Serve hot with applesauce and yogurt.
