INGREDIENTS
Vegetables
- 2 large sweet potatoes, peeled and cubed
- 1 large russet potato, peeled and cubed
- 2 large carrots, peeled and diced
- 1 cup peas
- ¾ cup corn
- 1 stalk celery, chopped
- 1 clove garlic, minced
Protein
- 1 pound ground turkey
- 🥚 ¼ cup egg substitute
Dairy
- ⅓ cup light sour cream
- 🥛 ½ cup hot milk
Seasoning and Herbs
- 1 teaspoon crumbled dried thyme
- ¾ teaspoon poultry seasoning
- ½ teaspoon crumbled dried thyme
- 1 teaspoon ground nutmeg
- 🧂 Salt and ground black pepper to taste
Additional Ingredients
- 1 tablespoon olive oil
- ½ cup chicken stock
- 1 tablespoon all-purpose flour
- 1 dash Worcestershire sauce
- 1 dash browning sauce
- 1 ⅓ cups herb-seasoned stuffing mix
STEPS
Preheat oven to 375°F (190°C). Lightly grease a 2-quart casserole pan.
Boil sweet potato, russet potato, and carrot separately until tender (5 to 7 minutes); drain.
Mash sweet and russet potatoes in a mixing bowl, adding egg substitute, sour cream, salt, and pepper; blend until smooth and fluffy.
Cook ground turkey in olive oil until browned; add onion, celery, garlic, thyme, and poultry seasoning. Add chicken stock and thicken with flour-milk mixture. Season with Worcestershire and browning sauce.
Layer turkey mixture in casserole dish, followed by stuffing mix, carrots, peas, and corn. Cover with mashed potato mixture and sprinkle with nutmeg.
Bake for 35 minutes until top is slightly browned; rest for 30 minutes before serving.
