INGREDIENTS

- 1 teaspoon vanilla extract

- 2 cups all-purpose flour
- 1 ½ teaspoons ground cinnamon
- 1 teaspoon baking soda
- ½ teaspoon ground nutmeg

STEPS
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt or tube pan.
Combine water and raisins in a saucepan over medium heat. Simmer until the water is absorbed; set aside to cool.
Mix applesauce, vegetable oil, eggs, liquid sweetener, and vanilla extract in a large bowl until well combined.
Sift flour, ground cinnamon, baking soda, ground nutmeg, and salt into the bowl. Stir until just combined.
Mix in raisins and walnuts. Pour the batter into the prepared pan.
Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour.
